Swamp Potatoes (Crock Pot)

It's that time of year again, where I'm swimming in fresh green beans. Not that I'm complaining, they taste amazing! Shrimp happened to be on sale at Kroger too, so I decided to make swamp potatoes in the crockpot. The dish is called swamp potatoes, but really, it's mostly green beans.

It's rare that I get out my crock pot in the summer, I tend to use it mostly for soups in winter, but I do enjoy making something that doesn't require me to stand over the hot stove! I would suggest getting everything ready in the morning and starting the crockpot then, that way the swamp potatoes are ready just in time for lunch. I hope you enjoy this crock pot recipe as much as I have this summer!

Ingredients:

  • 3 - 4 cups raw green beans

  • 2 - 3 potatoes

  • About 3 cups shrimp (or sliced sausage)

  • About 1/2 cup chopped onion

  • 1 Tb. minced garlic

  • 1/2 tsp. garlic powder

  • 1/2 tsp. paprika

  • 1/2 tsp. salt

  • 1/2 tsp. pepper



Instructions:

Add all ingredients (except meat) to your crock pot. Give it a good stir, then add about 2 cups water. Cover with lid, then set the crock pot to high. Cook on high for 5 hours or low for 10.


When the food has about an hour left, add in the meat (either shrimp or sausage), stir again, then replace the lid for remaining cook time.


As with any dish, make sure you are tasting to test the seasoning. Add more seasoning as you like. For more of a spicy kick, feel free to add hot sauce.
