Easy Stir Fry

Yes, the rice is purple! You can use any rice you want for this recipe, but I chose a wild rice mix with riceberry rice that turns all the rice grains purple. Normally I would use regular white rice for this recipe though.
I love how simplistic this stir fry recipe is. Not including the rice, there are really only 3 main ingredients! However, feel free to add extra veggies to the stir fry. Mushrooms, onion, sugar snap peas, or broccoli would all be wonderful additions.

Ingredients:
1 large carrot, shredded
About 3 cups green cabbage, shredded
1 (12.5 oz.) canned chicken
1 cup rice of choice, uncooked (can be any rice you want, I used a wild rice mix)
Sauce (I used sesame sauce, but teriyaki sauce would also work well)
A little bit of oil or butter
Instructions:
If you haven't prepped your vegetables yet, do it now. Measure and wash your rice. Cook rice according to package instructions. Season rice to liking and set aside when done.
Preheat a large saucepan over medium heat and add the oil (just enough to cover the bottom of the pan).
Add your raw veggies and sauté until tender. Add canned chicken, about 1/4 cup sauce, and any other seasonings of choice (ginger, soy sauce, pepper, etc.). Sauté for a few more minutes, then remove from heat.
Serve stir fry over rice or mixed together. Enjoy!
