Bread is one of my favorite things to bake (it makes my kitchen smell amazing!), but I don't always like the long rise/rest time involved, especially if I'm trying to make something in a hurry. Sometimes I forget to plan ahead, which can complicate things, but recipes like this one have helped me out in a pinch! These buns come together in under an hour (which for made-from-scratch bread, is amazing) and they're super easy to make. I hope you decide to try making them!

Ingredients:
2 Tb. active dry yeast
1 cup warm water
1/3 cup canola oil
1/4 cup sugar, heaping
1 egg
1 tsp. salt
3 - 3½ cups flour
Instructions:
Gently stir together the yeast and warm water until mixed. Add oil and sugar, give a final stir, and let stand for about 5 minutes.
Add egg, salt, and 3 cups of flour to the yeast mixture. Stir until everything is mixed and a soft dough forms. Additional flour may be added if dough is too runny.
Turn dough out onto a floured surface. Knead by hand (or using a stand mixer) for about 3 - 5 minutes, until the dough becomes smooth and elastic.
Quickly divide the dough into 8 pieces and roll into balls. Place evenly apart on a parchment-lined (or greased) baking sheet.
Preheat oven to 425 degrees F.

Cover and leave the buns to rest for 20 minutes.
Uncover buns and bake in oven for 10 - 12 minutes or until golden brown.
Let buns cool completely on a cooling rack before cutting.
