Berry Peanut Granola

This granola is great for a quick snack or breakfast in the morning! It's also fairly easy to make, and takes about 40-50 minutes total, including prep work. You can use any type of dried fruit in it, although I prefer cranberries or raisins in mine. This recipe makes about 5 and 1/2 cups.

Ingredients:

  • 2 cups quick oats

  • 1 cup shredded coconut

  • 1 cup chopped peanuts

  • 1 and 1/2 cups dried cranberries (or other dried fruit)

  • 1/4 cup canola or vegetable oil

  • 1/4 cup honey


Instructions:

Stir oats, coconut, and peanuts together in a large bowl.


Heat oil and honey in saucepan. When mixture begins to boil, immediately take off heat and pour over oat mixture. Stir to make sure everything is thoroughly coated.


Place parchment paper on baking sheet, and spread granola mix evenly onto the baking sheet. Put in oven at 300 degrees for 30 minutes, stirring every 10. The granola mixture should be lightly browned when done.


Remove from oven and mix in your dried fruit of choice. Let cool, then store at room temperature in covered containers. Enjoy!
