Cabbage and Ground Beef

Last week at the grocery store I decided to get some cabbage and bell peppers for a few recipes I'm planning on making. I love cabbage, whether it's in a skillet dish like this one or in a comforting soup. It adds a certain heartiness to whatever I make, and with cold season coming on, I've been trying to incorporate more veggies into meals! This cabbage and ground beef dish with red bell pepper is so delicious and comforting on a chilly day. It goes great with rice too if you want to stretch it a bit further!

Ingredients:
2-3 lbs. ground beef
1/2 head of cabbage, sliced
1 red bell pepper, sliced
1 small onion, diced
1 (28 oz.) can diced tomatoes
3-4 cloves garlic, minced
1 Tb. turmeric
salt
pepper
Instructions:
Brown ground beef in a large skillet. Add in tomatoes, onion, garlic, bell pepper, and cabbage. Cover and let simmer until vegetables are tender, about 30 minutes. Add in spices and stir. Leave uncovered to simmer for a few more minutes, then serve.
