Ham and Cheese Quiche

I've been hungry for a good quiche lately, and this one definitely hit the spot! It's fairly simple to make too! I just wish I had more veggies to add to it. That being said, feel free to switch up what add-ins you use: chopped onion, garlic, peppers, or sausage would all be wonderful additions. You may need to add an extra egg or two though, depending on how many add-ins you put in.

Ingredients:

  • 1 pie crust (bought or made beforehand)

  • 5 - 6 eggs

  • About 1 cup cheese (any kind will do, as long as it's shredded)

  • About 1 cup ham, cubed

  • 1 cup spinach

  • 3/4 cup cherry tomatoes, chopped

  • 1/4 cup milk

  • Salt

  • Pepper



Instructions:

Preheat oven to 350 degrees. Place your (uncooked) pie crust into your pie dish and poke holes (evenly throughout) with a fork. Pre-bake for 10 minutes.


Cook down the spinach and chopped tomatoes on the stovetop over medium heat, until spinach is wilted and tomatoes start to wrinkle.


Combine the spinach, tomatoes, ham, and cheese together in a bowl. Mix. Add eggs, milk, salt, pepper, and any additional spices you would like. Mix together well.


Pour the egg mixture into the pie crust and bake for 40-45 minutes, or until eggs have set.

Serve warm. Enjoy!
