Pumpkin Spice Truffles

Ingredients:
2 oz. cream cheese
2 Tb. powdered sugar
1/2 cup pumpkin puree
2 cups graham cracker crumbs
1/3 cup chocolate, grated
1/2 tsp. pumpkin pie spice
1/4 tsp. cinnamon
15-20 oz. chocolate, chopped
brown sugar for garnish (optional)
In a large bowl, using a hand mixer or a spoon, beat the cream cheese and powdered sugar together until smooth. Add the pumpkin puree and beat until mixture is well incorporated.
Add remaining ingredients in order, mixing well, then leave bowl in the fridge to chill for 2 hours.

After the 2 hours are up, take the bowl out of the fridge and roll the mixture into bite-sized balls. You should have anywhere between 20 and 30 of them. After all of the mixture has been rolled, place in the freezer to chill for another 45-60 minutes.
Once the balls have chilled, melt the chocolate to dip them in. I prefer to melt my chocolate in the microwave in 30 second intervals, stirring occasionally, but there are many different methods. Use a spoon, two forks, or another device to carefully dip each pumpkin ball into the melted chocolate. Drop onto wax paper. Sprinkle with brown sugar if desired.
Store on a plate covered by cling wrap, or in a plastic container. Refrigerate. Enjoy your pumpkin spice treats!
