Superhero Veggie Muffins

This recipe is healthy and perfect for breakfast in the morning--especially if you're like me and have trouble deciding what to eat sometimes.

Ingredients:
2 cups all-purpose flour
1 cup oats (either old fashioned or quick)
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3/4 cup walnuts, chopped
1 cup grated zucchini
1 cup grated carrots
3 large eggs
4 Tb butter, melted
1/2 cup milk, preferably sour
1/2 cup honey
1 tsp vanilla
*If you want to add a bit more sweetness, mix 1/2 cup of chocolate chips in.
Instructions:
Preheat oven to 350 degrees. Mix together dry ingredients (flour, oats, cinnamon, soda, salt) in a bowl. Gradually add the wet ingredients to the dry, mixing until just incorporated. Batter will be thick.
Place cupcake liners in a standard 12-muffin tin. Fill each liner with batter, to the top (about three spoonfuls each). Bake for 30-35 minutes, until muffins are cooked through and browned on top. Enjoy!
Let leftover muffins cool. Store in an airtight container for up to a week.
